One, all-purpose pot stows better in a camper or tightly packed car than multiple pots and pans. Not to mention, meals are easier to assemble, watch and, serve, leaving you with only one pot to wash.

10-ounce package of frozen spinach, thawed
1/3 cup flour
2 cups cottage cheese
8-ounce package shredded Cheddar cheese
Small can or jar mushrooms, drained
2 tablespoons vegetable oil
1/2 cup pepperoni, finely chopped (optional)
Spray a 10-inch skillet, drain the spinach and squeeze it dry. Whisk eggs with flour and stir in the cottage cheese and cheddar. Fold in your spinach and pepperoni while oil heats in the skillet. Spread your spinach mixture evenly in the skillet and then cover, reduce the heat, and cook until the bottom is crusty. Make sure the quiche is "set" in the middle before serving.
Creamy Ham Calico
2 packages, 10 ounces each, mixed vegetables, thawed
15-ounce can sliced potatoes, drained
Medium onion, diced
1 pound of cooked or canned ham, finely diced
15-ounce can kidney beans
1/2 cup water
1/2 cup flour
1/2 teaspoon each pepper, dry mustard, salt
3 cups milk
Serves 6 to 8
In a saucepan, bring your vegetables, potatoes, onion, ham and water to a boil. Cover, reduce the heat and cook for 10 minutes. Stir in the beans and let this simmer while you combine your flour, seasonings and milk in a bowl; whisk until smooth. Pour this flour mixture into the pan, stirring over medium heat until it thickens. Ladle everything into shallow soup bowls and sprinkle with cheese.
