Ingredients:
16 oz. elbow macaroni
3 cups cottage cheese
1/2 cup butter, cubed
1/2 cup flour
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. garlic salt
3 cups half-and-half
1 cup 2% milk
4 cups Cheddar cheese, shredded
Topping:
1 cup dry bread crumbs
1/4 cup butter, melted
Directions:
1. Preheat oven to 400 degrees. Cook macaroni until just tender, according to package directions.
2. In a food processor, process cottage cheese until smooth. Set aside.
3. In a large saucepan, melt butter over medium heat. Stir in flour, salt, pepper, and garlic salt. Gradually add half-and-half and milk, bring to a boil and simmer until thickened.
4. Transfer macaroni to a large bowl, and add Cheddar cheese, cottage cheese and white sauce. Toss to coat and transfer to a greased 13x9" baking dish. Combine bread crumbs and butter and sprinkle over top of macaroni. Bake uncovered for 20 minutes.

2. Toast the breadcrumbs in a skillet over medium-high heat until golden brown, about 5 minutes. Transfer to a bowl and rub 1 tablespoon of the butter into the crumbs. Mix in 1/4 cup parmesan cheese.
3. Transfer the bell pepper mixture to a food processor. Add Peppadews and brine, ancho chile powder, Cheddar cheese and the remainder of the butter, garlic cloves, and Parmesan cheese. Blend until smooth and add salt and pepper to taste.
4. Preheat oven to 400 degrees. Cook pasta until just tender, according to package directions. Stir sauce mixture and Mozzarella cheese into the pasta and transfer into a greased baking dish. Sprinkle with crumb mixure and bake until bubbling, about 25 minutes.
