Love butternut and acorn squash, but find them difficult or intimidating to prepare? Join us for this hands-on cooking class where we will prepare two simple recipes using winter squash favorites. We will also talk about tips and tricks for working with winter squash, including the best ways to get past those firm outer rinds.
What We'll Be Cooking:
- Creamy Coconut Curry Butternut Squash Soup: Learn tips for peeling a butternut squash while preparing this cozy, flavorful fall soup.
- Roasted Acorn Squash Tacos: No squash rind peeling required for this recipe! Learn how to roast squash rings with the rind on for easy removal post-cooking. You will then pair your roasted squash with black beans and corn for this three-sisters-inspired taco dish.
