Description
Camp Description: Each day of this intensive hands-on camp, participants will learn and practice unique noodle and dumpling-making techniques from around the world, then use the noodles they make to prepare a variety of delicious savory dishes.Monday: Ramen – There are innumerable variations of ramen, made from these basic components: broths, noodles, seasonings, and toppings. Participants will first learn to make the ramen noodles and will then learn to make classic broths for different delicious styles of ramen: miso, chicken, sweet pork, and vegetable broth (based on the four base “tare” (flavors)): Shio, Shoyu, Miso, and Tonkotsu. A variety of toppings will be available to customize individual ramen bowls. Ramen noodles will be used to make Sesame Garlic Ramen Noodles and Ramen Alfredo; Ginger Cookies round out the menu.
Tuesday: Soba Noodles - Soba noodles are unique, fun to make, and delicious to eat. In this camp, participants will learn to make buckwheat soba noodles from scratch and then use them to prepare these delicious dishes: Teriyaki Soba Noodles with Asian-style Vegetables; Sesame Soba Noodle Cakes with Sweet and Sour Dipping Sauce; Soba Noodles with Black Bean and Garlic Sauce. For dessert, delicious, delicate, buttery Green Tea Shortbread Cookies.
Wednesday: Egg Pasta - Prepare handmade egg pasta then decide which pasta shapes you wish to make. Choose from these fun pasta shapes: Cavatelli (small hollow shells); Orecchiette (small ear-shaped pasta); Pappardelle (large broad flat noodles) and Quadrucci (little squares) or come up with your own! Pastas will be tasted with these sauces: Alfredo (Creamy Garlic and Cheese) and Classic Marinara. Plus Pasta a la Huancaína from Peru and Rasta Pasta from Jamaica will be prepared. Jamaican Chocolate Cookies round out the menu.
Thursday: Raviolis, Kopytka and Spätzle - Prepare more egg pasta from scratch and then choose from these delicious ravioli fillings: Creamy Three Cheese; Spinach and Feta; Italian Sausage and Peppers. Plus make Kopytka (Polish mashed potato dumplings) with Onions and Cream; Cheesy Spätzle; and French Butter Cookies for dessert.
Friday: Handmade Noodles – Kids will learn to make these noodles from different countries and will then prepare dishes with them: Chinese Biang Biang Noodles--Biang Biang Mian (somewhat spicy noodles with vegetables) Udon Noodles--Yaki Udon (stir-fried udon noodles with soy garlic sauce); Hand-cut “Indomie” Noodles--Mie Goreng (noodles with a savory sweet sauce and greens); and French Butter Cookies for dessert.
